Creamy Pork Chops

< 3 net carbs per serving | Serving Size: One Pork Chop w/ sauce

If you loved the creamy garlic chicken recipe, this meal will become a family favorite as well. With only two net carbs per pork chop with sauce, you are free to eat good–and overeat.

Ingredients

The ingredient list is similar to the creamy garlic chicken, with a few tasty additions.

  • Pork chops of any size (I used thin cut) (0g carbs)
  • 1 Cup Heavy Whipping Cream (6.6g carbs per cup)
  • 1 Cup Chicken Broth (0g carbs per cup)
  • Onions (5g carbs per 1/2 cup)
  • Garlic Clove (<1g carbs)
  • Spinach (1g carbs per cup)
  • Butter (0g carbs)
  • Cherry tomatoes (4g carbs per cup)
  • 1/8-1/4 Cup Parmesan cheese (0g carbs per cup)
  • Seasonings of your choice–I use salt, pepper, cayenne pepper, table blend, onion powder, garlic powder, and paprika
  • 1/2 tsp Xanthan gum (optional)

Prepping the Pork

The first step to this recipe is to season the pork chops with seasonings of your choice. The seasonings that you put on the pork chops will flavor your sauce and other ingredients, so do not be afraid to over-season.

After seasoning your pork chops, cut up your onions and garlic, as well as tomatoes to prep them.

Frying Up the Flavor

Add butter, or olive oil to your frying pan and sear both sides of your pork chops until cooked. For my thin porkchops, it took about five minutes or less on each side.

After frying all of the pork chops, add the chopped onions and garlic to the pan with extra butter and sauté them in the leftover butter and seasonings.

Saucin’

Once sautéed, add one cup of chicken broth to the pan. Let it simmer and reduce, then follow by adding one cup of heavy whipping cream. Add your tomatoes in at this point as you let the sauce cook down. Cooking at low heat is recommended at this point in the cooking process.

Add 1/8 cup parmesan cheese to the mixture, and 1/2 teaspoon xanthan gum to make the sauce creamier, stirring thoroughly.

As the sauce thickens, add your desired amount of spinach to it.

Serve and Enjoy

Add your pork chops back into the sauce, and serve up a plate for you and the family. With only 2 net carbs per pork chop with sauce, don’t be afraid to ask for seconds. Your carb amount will vary based on how many tomatoes, onions, and sauce that you consume.
